Take 600 ml double cream and whip until in separates into butter and butter milk. Squeeze the butter to remove any more butter milk. That's are there is to it.

Melt equal quantities of butter, brown sugar and honey together
Mix in double the quantity of oats
Add dried fruit and nuts
Bake for 20 minutes at 180c in a parchment lined tin
Allow to cool in the tin

These are amazing buns to have with home made burgers
375g strong white bread flour
1 tsp yeast
1 tsp salt
1 table spoon sugar
150 ml milk
Mix together and knead for about 10 minutes. I tend to use a dough hook on a mixer.
Allow to double in size before shaping into rolls and snipping the top
Glaze with beaten egg and sprinkle with poppy or sesame seeds as desired
500g strong bread flour 50g soft butter 50g sugar 2 eggs 175ml milk 2 tsp yeast 1tsp salt
Mix everything together and kneed until smooth. It is quite a sticky mixture so if possible use a mixer with a dough hook.
Let rise until doubled in size about an hour
Roll out and sprinkle sultanas across before rolling up like a swiss roll and slicing into 12.
Allow to prove again for about 40 minutes
Bake for 15 mins
Allow to cool before coating in glace icing and a cherry
Most meatballs use raw meat, this uses pre cooked which means it is an excellent way of using up bits of chicken from the Sunday Roast or even excess Christmas turkey.
Blend together cooked chopped chicken, fresh breadcrumbs, 1 egg, fresh coriander, salt, dried coriander and cumin, clove of garlic and fresh chilli in a food processor. Make into balls or patties and then shallow or deep fry until golden
Serve with a Raita of yoghurt, grated cucumber and minced garlic
Two recipes here for pickles, both of which make great presents for friends and family.
Take small onions or shallots, pour boiling water over to soften skins. Peel and add to sterilised jars (10 minutes in a low oven), pour over malt vinegar and ensure the jars are fully filled. Keep for at least three months to ensure they are matured.
Roasted beetroot in red wine vinegar.
Take fresh beetroot, cut of tops and bottoms - do not peel. Roast in a low oven with olive oil and salt until tender. Allow to cool and then peel. Slice and put into sterilised jars,fill with red wine vinegar and store to mature as above.
This is a great recipe to use up left over or cheap lemons, limes or other citrus fruit
Melt 4oz butter with 4oz sugar with the juice of three lemons in a bowl over a pan of simmering water.
When melted beat in three egg yolks and continue to cook, stirring all the time, in the bowl over the hot water for 15-20 minutes.
Pour into sterilised jars, cool and keep in the fridge
To sterilise jars wash, rinse and place in an oven on its lowest setting for 10 minutes
