Sainsburys have a Switch the Fish campaign, in which they encourage people to switch from imported fish, to sustainable British fish.
I was lucky enough to be invited to the launch in Dursley and was given a parcel containing all these fish, Mussels, sardines, coley and Dover Sole. So I thought it would be useful to say what I did with them
With mussels I made moules
Clean the mussels and discard any that won't close when tapped
Saute garlic and onions
When soft add the mussels and steam for a couple of minutes until they are opened in some white wine
Add cream and enjoy with crusty bread
With the sardine, I gutted it and simply grilled it. I floured the sole and then pan fried it. I heated some butter in the pan until it was nut brown and poured it over the fish
I skinned the coley, and then cut it into chunks I made a beer batter out of plain flour, salt and enough beer to get a constistancy of single cream. I then dipped each piece in and then deep fried them.
